Ingredients

  • 8 oz (225 g) dried cannellini beans
  • 3 or 4 parsley stems
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 onions, finely chopped
  • salt and freshly ground black pepper
  • 2 garlic cloves, minced
  • 2 oz (60 g) pancetta, chopped (optional)
  • 5 cups chicken or vegetable stock
  • 3 shallots, thinly sliced
  • 1 celery stalk, chopped
  • 3 oz (85 g) italian fontina or taleggio
