Ingredients

  • 3 ½ cups all-purpose flour
  • ¾ tsp salt
  • ¼ tsp fleur de sel, plus more for decorating
  • 2 tsp white pepper
  • ½ cup dark unsweetened cocoa powder
  • 1 ½ cups (3 sticks) unsalted butter, cut into 1-inch cubes, cool, but not cold
  • 1 cup granulated sugar
  • 1 ¾ cups confectioners’ sugar
  • 3 large egg yolks
  • 1 tbsp pure vanilla extract
  • 3 oz good-quality dark chocolate (60-72% – i used 70% scharffenberger), melted
  • 5 oz vegetable shortening, at room temperature
  • 4 tbsp (1/2 stick) unsalted butter, cut
  • 3 ¼ cups confectioners’ sugar, sifted
  • ½ tsp salt
  • 1 tbsp pure vanilla extract
  • 1 tsp light rum
