Roasted Hatch Chile And Corn Rice

Ingredients

• 3 hatch chiles
• 1 whole fresh corn
• 6 cloves of garlic
• a big fistful of fresh cilantro
• 1 teaspoon cumin seeds + 1/2 teaspoon cumin seeds
• 3/4 cup uncooked rice, any white long grained or basmati
• 2 tablespoons oil + 1 tablespoon oil
• 1 small onion, diced
• hot chili oil (recipe below)
• fresh lime
• salt
• 1 cup cooked sausages/chorizo or cooked beans – whatever kind you prefer, if you want to make it a one pot meal (optional)
• red crushed pepper
• 1/4 cup oil
• cayenne pepper powder
