Ingredients

• 1 c whole-milk ricotta
• 2 1⁄2 c freshly shelled peas
• 2 t kosher salt
• 2 c loosely packed parsley, leaves only
• 1 t fresh thyme leaves, minced
• 1 t fresh mint leaves, minced
• 3 large egg yolks, at room temperature
• 1 t finely textured sea salt, plus more as needed
• 1⁄2 t white pepper, plus more as needed
• 1 1⁄2 c all-purpose flour
• 1 c parmesan, finely grated, plus more for garnish
• 8 sli thick cut bacon, sliced crosswise into 1/4-inch strips
• 1 t unsalted butter, plus more as needed
• 1⁄4 c chicken broth, plus more as needed
• mint leaves, both torn and whole to taste
• very good olive oil for drizzling
