My Dad's Seafood Enchiladas

- 8 white corn tortillas
- ½ lb imitation crab meat
- ½ lb bay shrimp (also known as shrimp meat, depending on the store)
- 3/4 c fat free sour cream
- 1 8 oz. jar salsa verde (green tomatillo sauce)
- ½ c shredded monterey jack cheese (optional)
- 6 scallions, chopped
- small handful of cilantro, chopped
- sliced black olives (optional for garnish)
