Macaroni & Cheese With Tofu

Ingredients

• 12 ounces silken tofu
• ½ cup milk
• ½ cup mascarpone cheese
• 1 cup grated extra-sharp cheddar cheese, packed
• ½ cup grated parmesan cheese
• 1 clove garlic, minced
• 2 teaspoons prepared yellow mustard (plain ol’ hot dog mustard)
• ½ teaspoon salt
• ½ teaspoon fresh ground pepper
• ¼ teaspoon tumeric
• 1/8 teaspoon fresh ground nutmeg
• ¼ cup grated onion (including any onion juice)
• ¼ cup chopped fresh parsley
• ¼ cup chopped fresh parsley
• ¾ cup toasted panko breadcrumbs
• 6 tablespoons grated cheddar cheese
• 2 tablespoons butter, cubed (optional)
