  • 2 vine ripened tomatoes, cut into quarters
  • 2 long red chiles, split and seeded
  • 2 long green chiles, split and seeded
  • few sprigs thyme
  • sea salt
  • ½ teaspoon freshly ground black pepper
  • 2 ounces butter
  • 3 ounces water
