Grilled Thai Ginger-Garlic Pork Chops

Ingredients

• 3 to 4 tbs. finely chopped lemongrass (remove the outer leaves from 1 or 2 stalks and chop the tender centers)
• 1/2 cup chopped fresh cilantro; more for garnish
• 3 tbs. chopped fresh mint; more for garnish
• 2 tbs. minced fresh ginger
• 2 tbs. minced garlic
• 4 tsp. granulated sugar
• 2 tsp. grated lime zest
• 1/2 cup asian fish sauce (nam pla or nuoc mam)
• 1/4 cup soy sauce
• 1/4 cup canned pineapple juice
• 2 tbs. peanut oil
• 4 frenched center-cut pork chops,about 1-1/2 inches thick
• lime wedges for serving
