Grilled Saffron Chicken Skewers


  • 2/3 cup mayonnaise
  • 3 tablespoons extra-virgin olive oil
  • 1 to 2 tablespoons minced fresh basil
  • 2 teaspoons fresh lemon juice
  • 1 plump garlic clove, minced
  • 1/8 teaspoon anchovy paste, optional
  • coarse salt (kosher or sea salt)
  • mnced zest and juice of 3 lemons
  • big pinch of saffron threads
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon dijon mustard
  • 2 garlic cloves, minced
  • 1 teaspoon coarse salt (kosher or sea salt)
  • 1/2 teaspoon paprika
  • 1 pound boneless, skinless chicken breasts, cut into 1/2-inch cubes
  • several cups of mixed vegetables, such as baby zucchini or yellow squash, red or white pearl onions, multicolored bell peppers, baby button mushrooms, endives, tiny ears of corn, marinated artichoke hearts, and/or pitted black or green olives, cut if needed into neat squares no larger than the chicken cubes
