Gluten-Free Blueberry Pie

Ingredients
- pastry for 2-crust pie
- 4 cups fresh blueberries
- 1/2 cup sugar
- ½ cup gluten-free flour
- 1 teaspoon lemon zest – usually 1 lemon
- 1 teaspoon limoncello (can also sub pure vanilla extract)
- 1 teaspoon cinnamon
- pinch of salt
- 2 tablespoons butter, cut into pieces
- 1 egg whisked with a teaspoon of water for egg wash
- cinnamons-sugar for sprinkling on top crust
