GFCF Corn Dog Muffins

Ingredients

• 4 hot dogs (always read labels, not all hot dogs are gf/cf)
• 1/2 cup of crisco butter flavor baking stick (1/2 cup = 1/2 stick)
• 2 eggs
• 3/4 cup sugar
• 1 and 1/4 cup almond milk
• 3/4 cup cornmeal
• 3/4 cup sweet rice flour
• 1/2 cup bob’s red mill potato starch
• 1/4 cup bob’s red mill brown rice flour
• 1/4 cup bob’s red mill arrowroot
• 4 teaspoons baking powder
• 3/4 teaspoon salt
• 1 tablespoon bob’s red mill flaxseed meal
• 3 tablespoons hot water
• 1 teaspoon of bob’s red mill guar gum
