- 1/2 cup dry roasted almonds
- 1/2 cup (1 stick) unsalted butter, softened
- 2 garlic cloves, minced
- 1/3 cup chopped white or yellow onion (half of one medium onion)
- 2 heaping tablespoons chopped parsley
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 teaspoons mined jalapeno (seeds removed)
- 1/4 to 1/2 teaspoon crushed red pepper flakes
- salt to taste
- 4 pounds mussels, scrubbed and debearded
- 1/2 cup dry white wine
