- 1 tablespoon dry active yeast
- 5 1/2 cups fine grind whole wheat flour
- 1 to 1 1/2 cup unbleached bread flour
- 1 tablespoon kosher salt
- 1 egg
- 3 tablespoons unsalted butter, soft
- poppy seeds
- 1 egg white mixed with a tablespoon of water
