  • 3 ounces semisweet chocolate, melted and cooled
  • 4 ounces salted shelled pistachios (about 1 cup), ground to a paste in a food processor
  • 1 large egg white
  • 1/8 teaspoon pure vanilla extract
  • pinch of coarse salt
  • 6 ounces bittersweet chocolate, chopped
  • 1 tablespoon vegetable shortening
