  • 50 g (1.8oz) caster sugar
  • 2 tsp vanilla extract
  • 75 g (2.6oz) wensleydale or white cheshire cheese, finely grated
  • 175 g (6.2oz) blueberries
  • 50 g (1.8oz) caster sugar
  • 1 cup icing sugar, for sprinkling
  • 1 cup mint leaves, to decorate (optional)
