  • 6 large red chillies, seeds removed, roughly chopped
  • 3 stalks lemongrass, white part only, roughly chopped
  • 3 tbsp light-flavoured oil
  • 2 tbsp ground cumin
  • 2 tbsp ground coriander
  • 2 tsp turmeric
  • 2 kg (4.4lbs) buffalo steak, diced
  • 400 ml (14.1fl oz) coconut milk
  • 2 cinnamon sticks
  • 1 tbsp tamarind paste
  • 1 tbsp brown sugar
