Ingredients

  • 1 1/2 cups flour, plus more for dusting
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vegetable oil
  • 1/2 cup cold water
  • 2 quarts vegetable stock (can substitute chicken stock)
  • 1/2 onion, sliced
  • 2 scallions
  • 6 cloves garlic, peeled
  • 2-inch knob of ginger, peeled and thickly sliced
  • 1/2 teaspoon peppercorns
  • 1/2 teaspoon salt
  • 1 medium potato, peeled and cut into half-circles
  • 1 medium korean zucchini (hobak) or 1 regular zucchini, cut into half-circles
  • 1-2 scallions, green part only, sliced
  • 1 teaspoon roasted sesame seeds, coarsely ground
  • 1/4 teaspoon gochugaru
  • about 2 tablespoons yangnyeomjang - korean seasoning sauce (optional)
