  • 2 large egg whites
  • 1 1/2 sticks (6 ounces) unsalted butter, at room temperature
  • 1 tablespoon violet sugar +1 tablespoon water (or 2 tablespoons violet liqueur)
  • 1 vanilla bean, split open and seeded
