Ingredients

  • 1 kg (2.2lbs) venison dice (haunch)
  • 3 carrots – diced
  • 1 celeriac – diced
  • 1 orange – zest only
  • 3 oranges – juice only
  • 1 bouqi garni
  • 100 g (3.5oz) flour (to dust the meat)
  • 250 ml (8.8fl oz) chicken stock
  • 1 onion – chopped
  • 2 cloves garlic – remove the skin
  • 1 pinch salt
  • 1 pinch pepper
  • 8 juniper berries
  • 1 tbsp parsley
  • 1 bottle of red wine (does not have to be premium, but ensure it is not a cheap wine)
  • 25 g (0.9oz) butter
  • 50 g (1.8oz) bacon lardons
  • 2 cloves garlic
  • 100 g (3.5oz) self raising flour
  • 1 tsp baking powder
  • 50 g (1.8oz) melted butter
  • 1 egg
  • 1 tsp thyme leaves
  • 1 tsp orange zest
  • 50 g (1.8oz) grated cheddar
