  • sea salt and fresh ground pepper, to taste
  • 2 oz. feta cheese, crumbled
  • 2 oz. crumbled goat feta or shredded yogurt cheese
  • 1 14-oz. can muir glen organic fire roasted tomatoes with green chiles
  • 2 garlic cloves
  • 1 tablespoon spicy salsa
  • a good splash of balsamic vinegar
  • 4 white corn tortillas
  • extra virgin olive oil, as needed
  • 1-2 oz. feta cheese or goat cheese, broken into pieces
