  • 3 cups water
  • 3 cups canned red kidney beans
  • ¼ cup tomato ketchup
  • ¼ cup tomato paste
  • 1 tablespoon unsweetened cocoa
  • 3/4 teaspoons salt
  • 2 cups cornmeal
  • 2 tablespoons all purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1½ cups buttermilk
  • 2 eggs
  • 1 teaspoon honey
  • 2 tablespoons vegetable oil
  • 1 cup cheddar cheese, coarsely grated
  • 4 ripe avocados
  • 4 scallions
  • juice of 2 limes
  • ¼ cup chopped cilantro
  • 2 cups sour cream
  • paprika to dust over
  • 3¾ cups cheddar cheese, grated
