  • 1 pound veal scallopini, pounded thin
  • 1/2 cup plain breadcrumbs
  • 1/4 cup finely shredded parmesan cheese
  • 1/4 teaspoon freshly ground pepper
  • 1 1/2 teaspoons plus 1 tablespoon extra-virgin olive oil
  • 1 garlic clove, peeled and halved
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon coarse salt
  • 1 cup grape or cherry tomatoes, halved
  • 3 ounces sunflower sprouts (2 cups packed)
  • 2 ounces pea shoots (3 cups packed)
