Ingredients

  • 2 packages active dry yeast
  • 12 cups plus 1 tablespoon sifted all-purpose flour
  • 2/3 cup plus 1 tablespoon sugar
  • 2 to 3 tablespoons warm water, 100 degrees to 110 degrees
  • 2 cups warm milk, 100 degrees to 110 degrees
  • 6 large eggs, 3 whole, 3 separated, room temperature
  • 8 large egg yolks, room temperature
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • zest of 1 lemon
  • zest of 1 orange
  • 3 tablespoons rum or brandy
  • 8 tablespoons (1 stick) unsalted butter, melted, plus more for pans
  • 1/2 cup vegetable oil
