  • zest of 1 lemon, removed with a vegetable peeler
  • 1 cup sugar
  • 1/2 cup kosher salt
  • 1 quart ice water
  • 8 whole chicken legs, thighs and legs separated
  • for the coating:
  • 5 cups all-purpose flour
  • 2 cups buttermilk
  • 2 large eggs
  • 2 cups finely ground cornmeal
  • 2 tablespoons seasoning, such as old bay
  • 1 tablespoon chili powder
  • 1 tablespoon fine sea salt
  • 1 teaspoon freshly ground black pepper
  • 6 cups vegetable oil, for frying
