  • 1/8 tsp. ground cloves
  • 1-15.5 oz. can diced tomatoes
  • 3 tbsp. cocoa powder
  • 3 tbsp. natural creamy peanut butter
  • 2 cups vegetable broth
  • 16 corn tortillas, warmed
  • 2 large sweet potatoes
  • 1/4 cup chopped cilantro
  • 1-12 oz. package of extra firm tofu, pressed for 30 minutes, drained, and diced
  • 1/2 tbsp. virgin coconut oil or vegetable oil
  • 1 clove of garlic, minced
  • 1/2 tbsp. ground cumin
  • 1/2 tsp. salt
  • 1 c. queso fresco, crumbled
