Ingredients

  • 1 tbs. olive oil
  • 3 lb. bone-in, skin-on chicken thighs
  • kosher salt and freshly ground pepper, to taste
  • 2 large leeks, white and light green portions, halved lengthwise and thinly sliced crosswise
  • 1 large red bell pepper, seeded and diced
  • 2 large garlic cloves, minced
  • 1/2 cup white wine
  • 3 cups chicken stock
  • 1/2 lb. good mother stallard beans, rinsed, soaked overnight, cooked until tender and drained
  • 1 1/2 cups fresh corn kernels
  • 1/2 lb. sugar snap peas, trimmed and cut in half on the bias
  • 1/2 cup thinly sliced fresh basil
  • 1/4 cup chopped fresh chives
  • 1 to 2 tbs. fresh lemon juice
