Ingredients

  • 2 pounds large-leaf spinach

  • 1 cup finely chopped onion

  • 3 to 4 thai bird chiles, each about 1 1/2 inches long, seeded and finely chopped
  • 1 pound baby spinach
  • 1 teaspoon turmeric
  • salt
  • 1/4 cup dried fenugreek leaves (kasuri methi)
  • 1 tablespoon butter
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 cup heavy cream (optional)
