  • 1/2 can sweet yellow corn
  • 1/3 c red bell peppers, diced (fresh or roasted, both work okay)
  • 1/2 medium red onion, diced
  • 2 serrano peppers, finely chopped
  • 1/4 c chopped cilantro
  • 1 large tomato, diced
  • 3 t canola oil
  • 1/4 c rice vinegar
  • 2 t agave nectar or honey
  • 1/2 t cayenne pepper
  • 1/4 t ground chipotle pepper (optional)
  • 1/4 t sea salt
  • 1 clove of garlic, minced
