  • 1 large shallot, very finely chopped
  • ¼ cup very finely chopped fennel
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon hot smoked paprika (pimenton)
  • 1 medium vidalia onion, diced
  • 1 red bell pepper, seeded and ribs removed, diced
  • 1 carrot, peeled and diced
  • 1 fennel bulb, quartered and thinly sliced, fronds reserved
  • 2 garlic cloves, chopped
  • 1 teaspoon hot smoked paprika (pimenton)
  • pinch cayenne
  • 1 tablespoon lemon juice
  • one 28-ounce can whole tomatoes
  • 1 pound spaghetti
