Ingredients

  • 8 ounces monterey jack cheese, shredded
  • 8 ounces sharp cheddar cheese, shredded
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 1 red bell pepper, finely diced
  • 2 tomatoes, seeded and finely chopped, or 1 can (14 1/2 ounces) petite cut diced tomatoes, well drained
  • 2 or 3 jalapeno or serrano chile peppers, seeded and minced
  • 1 large garlic clove, minced
  • 2 cups light cream or half-and-half
  • 6 ounces cream cheese, at room temperature
  • 1 tablespoon fresh lime juice
  • 1 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper, or to taste
  • salt
  • 2 tablespoons chopped fresh cilantro and/or scallions
