  • 2 dried guajillo chile peppers
  • 1 jalapeño pepper, roughly chopped
  • 10-oz bag frozen corn kernels
  • 6 cups chopped kale
  • optional toppings (not for vegan version): shredded cheddar cheese or sour cream
  • sliced lime, for garnish
