Slow Cooker Lentil Soup With Turkey Bratwurst, Leeks, And Sherry Vinegar

Ingredients

  • 2 tsp. olive oil (to brown the sausage)
  • 2 cups brown lentils
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 large leek, light green and white parts chopped and then washed in salad spinner or colander
  • 2 bay leaves
  • 1 tsp. dried thyme
  • 8 cups chicken stock
  • 2 t spanish sherry vinegar (or use another mild flavored vinegar)
  • chopped parsley for garnish (optional)
