  • 650g fava beans (about 200g once shelled)
  • 1 small onion, finely chopped
  • 1 celery rib, finely chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • 20-24 large raw tiger shrimp, cleaned and shelled
  • ½ red bell pepper, finely chopped
  • 1 large ripe tomato, diced
  • 20 kalamata olives, pitted and cut in half
  • 25g parmesan cheese (plus a little more to garnish)
