  • 5.5 ounces (1 cup) potato starch
  • 3 ounces (3/4 cup) tapioca starch
  • 6 tablespoons granulated sugar
  • 2 tablespoons baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon xanthan gum
  • 1 1/2 sticks (12 tablespoons) cold butter, cut into small pieces
  • 1 1/2 cups cold half and half (or 3/4 cup whole milk, 3/4 cup heavy cream)
  • coarse sugar for sprinkling on top of shortcakes, optional
  • easy strawberry shortcake
  • strawberries, hulled and sliced
  • confectioners' sugar
  • heavy cream or whipped heavy cream
