Ingredients

  • 8 shallots
  • 40 g (1.4oz) butter
  • 500 g (17.6oz) shoulder steak, trimmed and cut into 2cm cubes (or larger)
  • 25 g (0.9oz) plain four, seasoned with salt and pepper and a a tablespoon of paprika
  • 1 tbsp sunflower oil
  • 100 g (3.5oz) streaky bacon in one piece, cut into lardons (short strips and approx. 5mm thick)
  • 200 g (7.1oz) chestnut muchrooms, halved
  • 200 ml (7fl oz) red wine
  • 200 ml (7fl oz) beef stock
  • 2 tbsp chopped fresh parsley
  • 1 pinch sea salt
  • 1 pinch freshly ground black pepper
  • 110 g (3.9oz) butter
  • 280 g (9.9oz) plain flour
  • 1.5 large eggs. beaten
