  • handful parsley, chopped (about 1/4 cup)
  • 2-3 green onions, sliced thinly
  • 1 bell pepper, chopped
  • minced habenero pepper, to taste (optional, for heat)
  • 1-2 limes, juiced (to taste)
  • 2 tbsp vegetable oil
  • salt &; pepper, to taste
  • lettuce
  • tomato wedges
  • cucumber slices
  • hard boiled egg (omit if vegan)
  • avocado
  • salt &; pepper
