Ingredients

  • 3 cups cleaned, chopped leeks (2 large leeks, halved, sliced)
  • 1 tbsp. butter
  • 1/4 cup milk
  • 1/2 lb. fresh scallops
  • 1/4 cup whole wheat flour (i imagine that rice flour would work as a gluten free alternative)
  • 1 tbsp. unsalted butter
  • 1 tsp. dijon mustard
  • 1/2 cup white wine
  • 1/3 cup chopped shallots
  • 3-4 tbsp. finely chopped parsley
  • zest and juice of 1 lemon
