Ingredients

  • 1 package powdered gelatin
  • 1/4 cup water
  • 1 1/2 cup half &; half
  • freshly cracked black pepper (sift to remove any large pieces)
  • 1 teaspoon kosher salt
  • 1 1/2 tablespoons sugar
  • 2 teaspoon finely cut chives
  • 1 cup cruze buttermilk (substitute another good buttermilk if you do not have access to cruze farm's products)
  • 2 tablespoons crème fraiche or sour cream
  • 1 bunch of fresh asparagus
  • thinly sliced benton’s 18 month tennessee prosciutto
  • 2 cups muscadine wine
  • 2 teaspoons kosher salt
  • 1 teaspoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh cracked pepper
  • 1/2 cup grapeseed oil
  • 1/4 cup hazelnut oil
