  • 2 medium red onions, sliced through the equator, 1/2 inch thick
  • 1 red bell pepper, halved, stemmed, and seeded
  • 2 teaspoons kosher salt
  • 5 tablespoons extra-virgin olive oil, plus 1/3 cup for brushing the filo, or as needed
  • 1 tablespoon finely chopped ginger (about 1 inch, peeled)
  • 1 teaspoon ground cumin
  • 1/4 teaspoon round cinnamon
  • 1/4 cup coarsely chopped fresh cilantro
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup raisins
  • 1/4 cup walnut pieces
  • 2 medium garlic cloves, chopped
  • one 16-ounce bag spinach, large stems removed
  • 1 1/2 cups store-bought tomato sauce
