  • all-purpose flour, for work surface
  • 8 ounces fresh ricotta cheese
  • 2 large egg yolks
  • 1 ounce parmigiano-reggiano cheese, finely grated, plus at least 1 tablespoon for serving
  • coarse salt and freshly ground white pepper
  • 1 large egg, beaten
  • 1 tablespoon unsalted butter
  • 2 tablespoons olive oil, plus 1 tablespoon for cooking pasta
  • 1 clove garlic, thinly sliced
  • pinch of crushed red pepper flakes
  • 1 pint cherry tomatoes, halved
  • 1/2 teaspoon chopped fresh oregano
  • coarse salt and freshly ground black pepper
  • 2 tablespoons fresh tomato sauce
  • 1 tablespoon thinly sliced fresh basil
