  • 1 large egg yolk
  • 1 tablespoon chopped fresh oregano leaves
  • 1/4 teaspoon table salt
  • 1/8 teaspoon ground black pepper
  • 8 ounces hot or sweet italian sausage
  • 12 ounces broccoli rabe
  • 1 tablespoon minced garlic
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon water
  • 1/8 teaspoon salt
  • extra-virgin olive oil for brushing on the shaped calzones
  • kosher salt for sprinkling the calzones
