  • 3 tbs. cornstarch
  • 1 tbs. water
  • 1 lb. rhubarb, trimmed and chopped (about 5 cups)
  • 1 1/2 cups granulated sugar
  • 2/3 cup all-purpose flour
  • 2/3 cup firmly packed light brown sugar
  • 8 tbs. (1 stick) cold unsalted butter, cut into pieces
  • vanilla ice cream or whipped cream for serving (optional)
