Ingredients

  • 1/4 teaspoon freshly grated nutmeg
  • 1/8 teaspoon kosher or fine-grained sea salt
  • 2 ounces (4 tablespoons, 1/2 stick) unsalted butter, chilled in the freezer for 20 minutes
  • 3 tablespoons plus 1/2 cup heavy whipping cream
  • 1 extra-large egg yolk, at room temperature
  • 1/2 teaspoon pure vanilla extract
  • 1 teaspoon demerara or crystal sugar
  • 2 cups (9 ounces) fresh raspberries
  • 2 tablespoons (3/4 ounce) superfine sugar
  • 1 tablespoon grand marnier or other orange liqueur, or chambord (optional)
  • 2 tablespoons clover honey
  • 1 tablespoon thinly sliced crystallized ginger
