  • 1 tbsp seasoned rice vinegar
  • 2 tsp cornstarch
  • 2 tsp light olive oil
  • 1 1-inch piece of fresh ginger, peeled and grated
  • 5 scallions, chopped with the white parts and the green parts separated
  • 1 lb boneless pork chops, cut into thin strips
  • 1/4 cup dry-roasted peanuts, chopped (plus extra for sprinkling)
