  • 1 onion, quartered
  • 1/2 cup canned coconut milk
  • 3 garlic cloves, sliced
  • 4 cups (bite-sized pieces) cooked lamb
  • one 1 in (2.5 cm) piece fresh ginger, peeled and chopped
  • 1 cup frozen peas
  • 2 tbsp vegetable oil
  • salt and freshly ground black pepper
  • 1 tbsp black mustard seeds
  • chopped cilantro, to garnish
  • 1 tbsp curry powder
