  • 3 slender spring onions (we’re talking true spring onions, although you can substitute scallions)
  • 1 stalk green garlic
  • 1 leek
  • 3 sprigs fresh parsley, leaves separated from stems
  • 3 quarts (12 cups) cold water
  • 1/4 cup olive oil
  • salt
  • 1/4 cup arborio rice
  • 3 sprigs fresh mint, leaves only
  • black pepper, to taste
  • extra-virgin olive oil, for drizzling
