  • 1 tablespoon kosher salt
  • 2 large slabs (about 7 pounds) rib-on, skin-on pork belly, 2 inches thick
  • 5 to 6 cups wood chips, soaked in water for at least 30 minutes
  • 1 cup cider vinegar
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons red pepper flakes
  • 2 tablespoons hot sauce (such as frank’s)
  • 2 teaspoons kosher salt
  • 1 head green cabbage, cored and finely sliced or chopped (about 8 cups chopped)
  • 1 medium red onion, finely sliced (about 1 cup)
  • 1 large carrot, grated on large holes of box grater (about 1 cup)
  • 1 tablespoon table salt, plus more to taste
  • 6 tablespoons cider vinegar
  • 1 tablespoon dijon mustard
  • 3/4 cup mayonnaise
  • 2 tablespoons granulated sugar
  • 2 teaspoons freshly ground black pepper, plus more to taste
  • 8 to 10 soft buns
