  • 1 tbsp vegetable oil
  • 1 1/4 tsp salt
  • 1 egg
  • 2 to 3 cups flour
  • 4 quarts (16 cups) water
  • 1/2 cup baking soda
  • 1/2 cup dark brown sugar
  • corn meal for dusting the baking sheet
  • kosher or coarse salt for dusting
  • 2 tbsp melted butter or margarine (optional - if using butter, bread is no longer pareve)
  • 1 egg yolk
  • 1 tbsp cold water
  • 1/4 tsp white sugar
  • 1/4 tsp salt
