  • 8 oz pomegranate juice
  • 4 oz balsamic vinegar
  • 1 c pomegranate molasses, or substitute with standard molasses
  • 2 extra thick filet mignons
  • 1 (6 oz) package of arugula leaves, cleaned and dried
  • vegetable oil
  • salt and pepper, to taste
  • 2 medium russet or other starchy potatoes
  • 2 t unsalted butter
