  • 1 cup vegetable oil, for frying
  • 1 pound russet potatoes, peeled and diced
  • 1/2 cup plus 2 tablespoons extra-virgin olive oil
  • 1/2 yellow onion, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 2 bay leaves
  • 3 garlic cloves, peeled and finely chopped
  • 1/2 cup pitted niçoise olives, or other mild oil-packed black olives
  • kosher salt
  • white pepper
  • finely chopped flat-leaf parsley, for garnish
  • 4 large eggs
